Hello everyone! I hope December finds you
all in a time of good health and happiness,
especially as the holidays are approaching.
The holidays are always a great chance to
catch up with family, carry on family
traditions, and eat lots of great food! One
thing to remember is the importance of
dairy in all of these foods. Pies, cookies,
casseroles, and other Christmas favorites
can all easily contain a serving of your
dairy requirements. Beyond the main dishes,
be sure to drink a glass of milk, or eat some
cheese or yogurt 3 times a day to be sure to
keep your bones strong and your muscles
healthy! Even Santa, with this millions of
houses to visit in one night, still manages to
make time wash his cookies down with a
glass of milk, so you can too! To help
brighten your holidays, here is an easy
recipe for delicious cookies to drink with
your milk.

Merry Cheese Cookies

Crust:

1 c. all purpose flour

1/3 c. butter, softened

½ c. brown sugar, packed firmly

½ c chopped peanuts

Filling:

8 oz cream cheese, softened

¼ c. sugar

1 egg

2 T. milk

2 T. lemon juice

½ tsp vanilla

Preheat oven to 350 deg F. In a large bowl,
combine the flour, butter, and brown
sugar. Blend with mixer at low speed for 2-
3 mins until particles are fine. Stir in nuts.
Reserve 1 c. of the mixture for the topping.
Pat the remainder in an ungreased 8”
square pan. Bake for 8-10 mins.

Blend filling ingredients together until
smooth. Spread over partially baked crust.
Sprinkle reserved crumb mixture. Return to
oven 25-30 mins or until golden brown.
Cool and cut into squares. Store in the
refrigerator.

Makes 20-24 squares
